Ummm, the chef is in the kitchen!

The chef is in the kitchen making us a quick dinner.  Fried rice with a twist – no rice!

We substitute cooked Couscous for the rice.  Couscous is a whole grain with 7 grams of protein in each serving.  (Rice is just starch and fiber.)  It’s super easy to cook – basically boil 1-1/4 cups of water and then pour a cup of couscous in, cover it and let it sit 5 minutes (no heat!).  You could substitute chicken or vege broth for the water.  Put in whatever vege you want….

So ours tonight probably has onion, carrots, celery (mirepoix) and spinach with cubed tofu or leftover pork.  His secret sauce is called Memmi, which is a noodle soup base.  Kikkomans even makes it!

Quick, easy, uses leftovers, good for you and tastes great!
